Sour Cream Waffles

 
Sour Cream Waffles with Walnut Butter and Watermelon, Tomato, and Cucumber Juice
 
Our family always enjoys waffles, here's one I tried recently.  Waffles are a great breakfast food.  They require very little sugar.  Make extra and freeze those for later.  The kids can just pop the frozen waffles in the toaster for breakfast on another day.  Of course you will need a waffle iron to make these waffles.  If you don't have one, make whole food pancakes and use the walnut butter on the pancakes.  If you are using maple syrup, make sure the bottle says maple syrup and not table syrup.  Use in moderation. 
 
 
Walnut Butter 
1/4 cup chopped walnuts
1/2 cup unsalted butter
1 Tbsp of raw sugar
1 Tbsp of coconut butter or walnut oil
 
Mix all ingredients together.  Set aside until waffles are ready.  The butter gives you natural vitamin A, walnuts the omega 3 fat.  The extra oil gives it more flavour and makes it easier to spread.  This butter has a very nice taste and can be used on crumpets or English Muffins.
 
2 cups of light spelt flour
3 Tbsp raw sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1 3/4 cups sour cream
2 large eggs, seperate yolk from whites
3 Tbsp butter, melted
2 tsp pure vanilla extract
 
Preheat the waffle iron and oven to keep your waffles warm, so everyone can sit down together and eat at the same time.  
In a medium size bowl, combine the flour, raw sugar, baking powder and baking soda.  Set aside.
In another medium size bowl, whisk together sour cream (make sure there are no fillers in your sour cream.  Yogurt or kefir can work too)  egg yolks, butter and vanilla.  Pour this mixture into the dry ingredient, stirring with a few quick strokes to form a lumpy batter. 
 
In a small bowl with an electric mixer set on high, beat the egg whites until stiff peaks form.  Using a rubber spatula, gently and thoroughly fold the egg whites into the batter.  
 
Lightly grease the waffle iron.  Put about 1/3 cup of batter in waffle iron (this will depend on what kind of iron you have)  Spread batter around to cover the grill. 
 
Once cooked transfer to warm oven.  When all the waffles are made.  Serve warm waffles with walnut butter...ummm
 
Want a great morning pick me up.  Watermelon, tomato and cucumber.
 
Blend about 2 cups of watermelon, one tomato, and about a cup of cucumber in your blender.  Makes a great morning drink.  This is enough for about 2 - 6 oz glasses.  There are so many nutritious health benefits to this, your cells are going to thank you.
